Ingredients:
1 cup prepared acorn flour
3 cups white flour
1/2 cup sourdough starter
2 tsp active dry yeast
1/4 cup sugar
1 tsp salt
~ 1 cup water
Directions:
1. Mix all the ingredients either in a bowl, a bread machine or a food processor
2. Mix very well - the dough should stick together and not be wet. Add additional flour or water until you get this consistency.
3. Place the dough into a floured bowl or proofing baskets
4. Turn the oven on to 475 and place a Dutch oven in to preheat for about an hour
5. Let rise for about an hour until doubled in size
6. Take the Dutch oven out of the oven and flour the bottom.
7. Place the dough into the Dutch oven by turning the bowl upside down.
8. Score the top of the bread, place the lid back on and place the Dutch oven into the stove.
9. Cook with the lid on for 30 minutes.
10. Remove the lid and cook another 20 minutes.
11. Let cool slightly before cutting.
Serve warm with butter or jam.
It tastes a little sweet and a little nutty. Reminiscent of Irish brown bread. I will be making this every fall!
